Chef’s Plate Review – Purple Rice Stir-Fry

I have been reviewing Chef’s Plate on a regular basis for the last few months, and you all know I am obsessed with this meal delivery service. But for those of you who are new to the concept, here’s how it works:
- Sign up for a subscription – delivery available to Ontario, British Columbia, Alberta & Manitoba
- Choose the 2-person plan or the family plan
- Choose to receive 2, 3 or 4 meals per week
- Choose your delivery date – Tuesday or Friday
- Choose your recipes
- Receive your ingredients in a refrigerated box, portioned and with step-by-step cooking instructions
Here’s a look at one of my recipes from last week:
Recipe: Purple Rice Stir-Fry
Ingredients:
- 1 pack tofu
- 5 oz black and white rice blend
- 8 oz broccolini
- 1 yellow bell pepper
- 3 cloves garlic
- 1/2 oz roasted soy nuts
- 1 oz sweet soy glaze
- 1-3 test hot chili sauce
- 1 oz cornstarch
Directions:
- cook rice – add to pot with 1 1/2 cups warm water, season with salt, bring to boil, cover with lid, reduce heat to medium low and cook for 28-30 minutes
- cut tofu into 1 inch squares, add to medium bowl and toss with cornstarch, heat pan with 2 tbs oil, add tofu, cook 4 minutes each side, until golden
- cut broccolini into 1 inch pieces, mince garlic, slice pepper, in large pan add 1/4 cup water, season with salt, when water boils add pepper and broccolini, cook for 5-7 minutes until water has absorbed
- combine vegetables and tofu in same pan and toss for 30 seconds to warm
- in small bowl mix sweet soy glaze, garlic, chili sauce and 2/3 cup water, mix to combine
- plate purple rice with vegetables and tofu, drizzle with sauce and sprinkle with soy nuts
- enjoy!
