What would I do without my Chef’s Plate deliveries? Especially given the current circumstances. It has been a lifesaver the last few weeks and I’ve come to appreciate it more than I did before. Each week I am provided with all the ingredients for three wonderful meals, I get to test out new recipes, I get to learn new cooking techniques and I can skip a trip to the grocery store. It really is one of my favorite subscriptions.

We order 3 new Chef’s Plate recipes each week, and have been since August of 2016. Here’s a look at one of the recipes we received this past week….
Smoky Lentil Taquitos with Avocado Salsa
Taco-bout a taquito revolution! These plant-powered wonders tuck seriously craveable smoky flavour into their crisp tortilla exterior. Tame the heat with a cool and refreshing avocado salsa.
Ingredients:
- 1 can Lentils
- 6 Flour Tortillas
- 56g Tomato Paste
- 1 Red Onion
- 1 Avocado
- 1 Mini Cucumber
- 56g Feta Cheese
- 1 Sweet Bell Pepper
- 1g Chipotle Powder
- 15g Red Wine Vinegar
- Taquito Spice Mix (Garlic Salt · Ground Cumin · Taco Seasoning · Applewood Smoke Spice)
Directions:
Prepare Ingredients: wash and dry all produce, dice pepper, dice onion, dice cucumber, dice avocado
Cook Aromatics: in large pan heat oil, add peppers and 3/4 onion, cook until softened, season with salt and upper, stir in tomato paste, spice mix, chipotle powder and 1/2 tbsp oil, cook stirring often for 1 minute until toasted
Cook Lentil Filling: to the same pan add lentils and can liquid, bring to simmer over high, reduce heat to medium-low, cook stirring often, for 4-6 minutes, until thickened, season with salt and pepper
Build Taquitos: grease 8×8 baking dish, on clean surface lay tortillas and add 1/3 cup lentil filling to each tortilla, roll taquitos and press gently to close, arrange in baking dish seam side down, broil in oven for 3-4 minutes, until tortillas are crisp
Mix Avocado Salsa: in medium bowl mix avocado, cucumber, remaining onion, vinegar, 1/2 tbsp oil and 1/2 tsp sugar, season with salt
Plate & Serve: serve taquitos with feta cheese crumbled over and some avocado salsa over top, plate remaining avocado salsa alongside
Thoughts: This will be our second time making this dish from Chef’s Plate, we have ordered it once before. It was very quick and very easy to make. I love the flavour of the lentil filling and even had a few spoonfuls on its own. I had a yellow pepper in the fridge that needed to be used so I added that to the mix. The avocado salsa was the perfect topping and could also be enjoyed with chips or as a topping on other dishes. If these Taquitos show up on the Chef’s Plate menu again I would order them for a third time.
