HelloFresh Canada Review: Bibimbap Rice Bowl

HelloFresh Canada delivers fresh ingredients and healthy, chef-curated recipes based on seasonal farm fresh ingredients straight to your doorstep each week. Every week HelloFresh members choose three meals from a selection of award-winning, constantly-changing recipes (say goodbye to recipe boredom!). They kindly sent us this box for review.

I can’t even tell you how much I have been loving my HelloFresh Canada deliveries as of late. It really is the perfect solution for new parents and/or busy parents. The meals are flavourful, there’s lots to choose from, they are delivered to your door, and most importantly, they are quick and easy to make. This is something worth making note of, when it comes to meal delivery boxes I find that HelloFresh Canada meals are a little bit easier to make as they often require fewer steps, and have simple ingredient lists.

Bibimbap Rice Bowl and Spicy Sesame Sauce with Beyond Meat®, Zucchini and Carrots

This Korean rice bowl is packed with veggies, rice and Beyond Meat®. Finish it with a spicy-sweet sesame sauce, and stir all these vibrant ingredients together for a classic Korean experience.

Ingredients:

  • 2 unit Beyond Meat®
  • ¾ cup Jasmine Rice
  • 200 g Zucchini
  • 170 g Carrot
  • 1 tbsp Sesame Seeds
  • 1 tbsp Gochujang
  • 2 unit Green Onions
  • 2 tbsp Soy Sauce
  • 1 tbsp Honey

Directions:

1: Before starting, preheat the oven to 450°F. Wash and dry all produce.Heat Guide for Step 1(dbl for 4ppl):• Medium:1 tsp • Spicy: 2 tsp • Extra-spicy: 3 tsp Bring 1 ¼ cups water (dbl for 4ppl) to a boil in a covered medium pot. Peel, then cut carrots into 1/4-inch thin slices, then cut slices into 1/4-inch matchsticks. Cut the zucchini in half lengthwise, then into 1/4-inch half-moons. Thinly slice green onions.Stir together 2 tsp gochujang (NOTE: Reference heat guide), 1/2 tbsp water (dbl for 4ppl), half the honey and half the soy sauce in a medium bowl.

2: Add rice to the pot of boiling water. Reduce heat to low. Cover and cook, until rice is tender and liquid is absorbed, 12-14 min.

3: Toss zucchini with carrots and 1 tbsp oil (dbl for 4ppl) on a parchment-lined baking sheet. Season with salt and pepper. Roast in the middle of the oven until tender-crisp, 8-10 min.

4: Heat a large non-stick pan over medium heat. Add the sesame seeds to the dry pan. Toast, stirring often, until golden-brown,4-5 min. (TIP: Keep your eye on them so they don’t burn!) Transfer to a plate.

5: Heat the same pan over medium-high heat. When hot, add 1/2 tbsp oil (dbl for 4ppl), then Beyond Meat ®. Cook, breaking up the patties into bite-sized pieces with a spatula, until slightly crispy, 5-6 min.** Remove pan from heat, then add remaining soy sauce and remaining honey. Stir to combine. Season with salt and pepper.

6: Stir half the toasted sesame seeds into the medium bowl with sauce. Sprinkle remaining sesame seeds over veggies. Fluff rice with a fork. Season with salt and stir in half the green onions. Divide rice between bowls then top with Beyond Meat ® and veggies. Drizzle with spicy sesame sauce then sprinkle over remaining green onions.

Bibimbap Rice Bowl – Final Thoughts

I made this HelloFresh Canada meal for my husband and I last night. I was running behind all day, short on time, and a little frazzled. I really didn’t want to order take-out so I chose this meal specifically because it had a simple ingredient list and was very easy to make. It took me 30 minutes from start to finish and the directions were simple enough that I didn’t feel overwhelmed in the least. I also love that it was a healthy dish, had great flavour, and included one of my favorite ingredients – Beyond Meat. I would definitely oder this one again.
