HelloFresh Canada Review: Broccoli Stir Fry

Here’s a closer look at one of the recipes from this week’s HelloFresh Canada delivery…..

Broccoli Stir Fry with Beyond Meat® and Garlic Rice

Savoury and saucy, this vegetarian take on a takeout classic goes beyond!

Ingredients:

  • 2 unit Beyond Meat®
  • 227 g Broccoli, florets
  • 2 unit Green Onions
  • 30 g Ginger
  • 6 g Garlic
  • 28 g Peanuts, chopped
  • 1 tbsp Cornstarch
  • ¼ cup Vegetarian Oyster Sauce

Directions:

1: Before starting, wash and dry all produce. Peel ginger using a spoon’s edge — you’ll be able to maneuver around the knobbly bits more easily! Cut broccoli into bite-sized pieces. Peel, then mince or grate 1 tbsp ginger (dbl for 4ppl). Thinly slice green onions. Peel, then mince or grate garlic.

2: Heat a medium pot over medium heat. When hot, add 1/2 tbsp oil (dbl for 4ppl), then garlic and rice. Cook, stirring often, until fragrant, 1-2 min. Add 1 1/4 cup water (dbl for 4 ppl) and bring to a boil over high heat. Reduce heat to low. Cover and cook, until rice is tender and liquid is absorbed, 15-18 min.

3: While rice cooks, heat a large non-stick pan over medium-high heat. When hot add 1 tbsp oil (dbl for 4ppl), then the broccoli. Cook, stirring occasionally, until tender-crisp, 4-5 min. Remove pan from the heat. Transfer broccoli to a plate.

4: While broccoli cooks, whisk together vegetarian oyster-soy sauce, 1 tsp sugar, 1 1/2 tsp cornstarch and 3/4 cup water (dbl all for 4ppl) in a medium bowl.

5: Heat the same pan (from step 3) over medium-high heat. When hot, add ½ tbsp oil (dbl for 4ppl), then Beyond Meat® and ginger. Cook, breaking up Beyond Meat® into smaller pieces, until golden, 4-5 min.** Add cornstarch mixture and broccoli. Cook, stirring often, until slightly thickened, 2-3 min. Season with pepper.

6: Fluff rice with a fork, then stir in half the green onions and season with salt. Divide the rice between bowls, then top with the stir-fry. Sprinkle with peanuts and remaining green onions.

Final Thoughts

Love, love, love! I’ve had my eye on this recipe for a little while now. I’ve seen it on the menu before but kept on missing the chance to order it. I’m happy to report that it did not disappoint. Not only was it EXTREMELY easy to make, it also had great flavour and the portion size was perfect. I could easily make this again thanks to the simple ingredient list. I could also add some different veggies depending on what I had in my fridge at the time. I’m definitely thinking mushrooms, carrots and red peppers. And can I just say again (for the fiftieth time) how happy I am that they include one Beyond Meat recipe on the menu each week?! They always end up being my favorite.

PS – This recipe was supposed to make 2 servings but I made the portions a little smaller and was able to get 3 servings as opposed to 2. I am able to do this with most of my HelloFresh Canada recipes.
