HelloFresh Canada Review: Fattoush Salad with Roasted Chickpeas

They kindly sent us this box for review.

What in the world would I do without subscription boxes like HelloFresh Canada? Well….lets see….we would probably starve, or we would be living on frozen pizza from Costco.

Times they are a changin’ and life doesn’t quite look like it did this time last year. Not only do we have a new baby in the house, but we are no longer making regular trips to the grocery store. Hence….the overly dramatic statement “we would probably starve without our HelloFresh delivery” – But it’s true!

Here’s a closer look at one of the recipes from this week’s HelloFresh Canada delivery…..

Fattoush Salad with Roasted Chickpeas Spiced Pita and Feta Cheese

Everything about this salad delights! From our beloved shawarma spice blend to the crispy pita and chickpeas, we can’t get enough. All that layered with a bright dressing tossed with herbs and fresh veg, we know you’ll love it!


  • 398 mL Chickpeas
  • 1 tbsp Shawarma Spice Blend
  • 6 g Garlic
  • Greek-Style Pitas
  • 227 g Grape Tomatoes
  • 132 g Mini Cucumber
  • 14 g Parsley
  • 30 g Green Olives
  • 2 unit Green Onions
  • 2 tbsp White Wine Vinegar
  • ½ cup Feta Cheese, crumbled


1: Before starting, preheat the oven to 425°F and wash and dry all produce. Drain and rinse chickpeas. Toss chickpeas with half the shawarma spice blend and 1 tbsp oil (dbl for 4 ppl), on a parchment-lined baking sheet. Season with salt and pepper. Peel garlic. Toss garlic with 1/2 tsp oil (dbl for 4 ppl), on a small sheet of foil. Wrap tightly and place on the same baking sheet.

2: Roast chickpeas and garlic in middle of oven, stirring chickpeas halfway through cooking, until golden-brown, 28-30 min.

3: While chickpeas and garlic roast, cut pita into 1-inch pieces. Toss pita and remaining shawarma spice blend with 1 tbsp oil (dbl for 4 ppl), on another parchment-lined baking sheet. Season with salt and pepper. Bake in top of oven, until golden-brown and crisp, 4-5 min.

4: While pita toasts, halve tomatoes. Thinly slice green onions. Cut cucumbers into 1/2-inch thick half-moons. Roughly chop olives. Roughly chop parsley.

5: Add roasted garlic cloves to a large bowl. Using a fork, mash cloves. Whisk in vinegar, 1 tsp sugar, 2 tbsp oil and 1 tbsp water (dbl all for 4 ppl). Season with salt and pepper.

6: Add chickpeas, green onions, tomatoes, cucumbers, parsley, olives and half the feta in the bowl with dressing. Toss together. Divide pitas between bowls and top with the chickpea mixture. Sprinkle over remaining feta.

Want to know what I love about this HelloFresh Canada recipe? Its full of fresh ingredients, its oh-so healthy, it was extremely easy to make and it wasn’t weighed down by a heavy dressing. It was the perfect meal for a hot Summer day. I was able to make it in stages while looking after baby Steven, stopping to change a diaper, putting him down for a nap, etc. I got everything prepped and ready to go and then I combined all the inregients right before we sat down to eat. The simple dressing allowed the flavour of the fresh vegetables to shine through and the baked pita crisps took it from a salad to a meal. I absolutely love this recipe and would definitely order it again.
