Mediterranean Roasted Veggie Sandwich – Final Thoughts

It’s kind of funny….I thought for sure the Hubby wouldn’t like this recipe and was totally prepared for him to say so as we sat down to eat. But….to my surprise, he loved the veggie sandwiches. It’s such a simple recipe – roasted veggies, feta spread and an arugula salad. But I’ve come to realize that the most basic recipes often end up being the best recipes. HelloFresh Canada nailed it with these Mediterranean inspired sandwiches. They were beyond easy to prepare, the veggies were oh-so-fresh, the salad was the perfect pairing, and they were a nice treat on a hot summer day. As is the case with most of our HelloFresh Canada recipes, we would definitely order this recipe again.
